Spring Cleaning...for the Body!

Have you started your spring cleaning? I take extreme precautions on when to start mine these days and know not to touch my fleece and feather trimmed dresses until at least the middle of April. In the past years when I have finally moved all my winter weather wear into storage the weather has inevitably turned icy, mocking my attempt to jump start on organizing. I refuse to be fooled by the Oklahoma weather this year my friends and will keep super superstitious.


While pondering my start date I got to thinking about spring cleaning and the extreme gratification I feel after, and decided that I can apply it to other parts of my life. Enter the GM CLEANSE DIET. My husband wanted to “jump start” his diet regime and decided this was just the ticket. Passed down from his boss who had great success, the diet’s outline landed in my mitten free hands on Friday. Still not touching those clothes my dears. It intrigued me although I am both a skeptic and cynic with “cure all diets”. Nevertheless, I will give you one guess on who his fellow cheerleader/motivator is…

Me. Anti-fan of fad diets Me. Nevertheless, he needs a partner in crime and well you all know by now that I am always a willing guinea pig. Best part? The diet is gluten free so I didn’t have to do any leg work there. Worst part? I am starving right now. My Inspiration? Curiosity and a white bathing suit I will be slipping into in 2 weeks. Scottsdale here I come!

We started the diet today and I am keeping my fingers, toes, and bikini strings crossed that it is a success. I will let you know how it goes friends! To join me on my journey see the detailed instructions below. I have included the vegetarian version at the bottom, which I will be following since I personally feel better with a plant based focus diet.

I have the special soup in the pot as we speak and will report back with photos and feelings in the next couple days. Hopefully with a little less of pooch ;) I will also let you know any alterations I make for better/worse.
PS- winter clothing still snug as a bug and holding up permanent residence in my downstairs closet for one more week. I advise you to follow my lead fellow Oklahomans.

GM DIET
This plan can be used as often as you like without any fear of complications. It is designed to flush your system of impurities and give you a feeling of well being. After seven days you will begin to feel lighter because you will be lighter by at least 10 lbs. You will have an abundance of energy and an improved disposition.

During the first seven days you must abstain from all alcohol
You must drink 10 glasses of water each day

Day One All fruits except bananas. Your first day will consist of all the fruits you want. It is strongly suggested that you consume lots of melons the first day. Especially watermelon and a loupe. If you limit your fruit consumption to melons, your chances of losing three lbs. on first day are very good.

Day Two All vegetables. You are encouraged to eat until you are stuffed with all the raw or cooked vegetables of your choice. There is no limit on the amount or type. For your complex carbohydrate, you will start day two with a large baked potato for breakfast. You may top the potato with one pat of butter.

Day Three A mixture of fruits and vegetables of your choice. Any amount, any quantity. No bananas yet. No potatoes today.

Day Four Bananas and milk. Today you will eat as many as eight bananas and drink three glasses of milk. This will be combined with the special soup which may be eaten in limited quantities.

Day Five Today is feast day. You will eat beef and tomatoes. Eat two 10 oz. portions of lean beef. Hamburger is OK. Combine this with six whole tomatoes. On day five you must increase your water intake by one quart. This is to cleanse your system of the uric acid you will be producing.

Day Six Beef and vegetables. Today you may eat an unlimited amount of beef and vegetables. Eat to your hearts content.

Day Seven Today your food intake will consist of brown rice, fruit juices and all the vegetables you care to consume.

Tomorrow morning you will be 10-17 lbs. lighter than one week ago. If you desire further weight loss, repeat the program again. You may repeat this program as often as you like, however, it is suggested that you are allowed two glasses of white wine in addition to the instructions on the program. You may substitute champagne for white wine. Under no circumstances are you to drink any other alcoholic beverages with the exception of beer which is allowed. Any liquor (bourbon, vodka, rum) is forbidden. Cream drinks are especially forbidden. You may have an occasional cordial such as crème de menthe or schnapps, but you must always limit yourself to two drinks. If you wine, drink only wine that day. If you have beer, drink only beer that day, etc. Alcohol adds empty calories to your diet. However, after the first week it will help your digestion and settle your stomach.

G.M.’S Wonder Soup

The following soup is intended as a supplement to your diet. It can be eaten any time of the day in virtually unlimited quantities. You are encouraged to consume large quantities of this soup.
28 oz, Water, 6 Large Onions, 2 Green Peppers, Whole Tomatoes (fresh or canned), 1 Head Cabbage, 1 Bunch Celery, 4 Envelopes Lipton Onion Soup Mix, Herbs and Flavoring as desired.

Additional Comments

Vegetables as may be taken in the form of a salad if desired. No dressing except malt, white or wine vinegar, squeezed lemon, garlic, herbs. No more than one tea spoon of oil.

You have been given a recipe for the WONDER SOUP which can be eaten in unlimited quantities. This soup is a supplement while you are on the program and it should be a pleasure to eat. Not everyone likes cabbage, green peppers, calory etc. This recipe is not inflexible. You may substitute vegetables according to your taste. You may add any vegetables you like: asparagus, peas, corn, turnips, green beans, cauliflower, etc. Try to stay away from beans (lima, pinto, kidney, etc.), however, because they tend to be high in calories even though they are very good for you.

Beverages you may consume while on the program :

1. Water (flavoured with lemon/lime if desired).
2. Club Soda is OK.
3. Black Coffee. No cream or cream substitute. No sugar or sweetness.
4. Black Tea = Herb or Leaf.
5. Absolutely nothing else except the fruit juices which are part of day seven. No fruit juices before day seven.

How and Why It Works

Day One you are preparing your system for the upcoming program. Your only source of nutrition is fresh or canned fruits. Fruits are nature’s perfect food. They provide everything you could possibly want to sustain life except total balance and variety.

Day Two starts with a fix of complex carbohydrates coupled with an oil dose. This is taken in the morning for energy and balance. The rest of day two consists of vegetables which are virtually calorie free and provide essential nutrients and fiber.

Day Three eliminates the potato because you get your carbohydrates from the fruits. You system is now prepared to start burning excess pounds. You will still have cravings which should start to diminish by day four.

Day Four, bananas, milk and soup sound the strangest and least desirable. You’re in for a surprise. You probably will not eat all the bananas allowed. But they are there for the potassium you have lost and the sodium you may have missed the past three days. You will notice a definite loss of desire for sweets. You will be surprised how easy this day will go.

Day Five, Beef and tomatoes. The beef is for iron and proteins, the tomatoes are for digestion and fiber. Lots and lots of water purifies your system. You should notice colorless urine today. Your allowance calls for the equivalent of five “quarter ponders”. Do not feel you have to eat all this beef. You must eat the six tomatoes.

Day Six is similar to day five, Iron and proteins from beef, Vitamins and fiber from vegetables. By now your system is in a total weight loss inclination. There should be a noticeable difference in the way you look today, compared to day one.

Day Seven finished off the program like a good cigar used to finish off Victorian meals, except much healthier. You have your system under control and it should thank you for the flushing and cleaning you just gave it.

Schedule for GM Diet Vegetarian


Similar to the typical GM Diet, the vegetarian version of GM diet also requires you to follow a seven-day schedule.

Day 1 Only fruits. Just like in the regular GM diet, only fruits are allowed to be consumed on the first day. All fruits can be consumed in generous quantities except for bananas, as they are high in carbohydrates and potassium. Water intake should also be observed at 10-12 glasses during the whole day.

Day 2 The second day involves potato and vegetables. A cup of baked potato would serve as the body’s main energy source for the day, and then it can be followed up with vegetable dishes during lunch and dinner. Vegetable soup is highly powerful during this day, as it provides all the energy the body would need.

Day 3 Fruit and vegetables. Fruits and vegetables may be served the whole day, from breakfast to dinner, including midday snacks. Fruit juice can also be taken aside from water, although no bananas or potatoes are allowed.

Day 4 Bananas and milk. Banana and milk combos may be consumed all day, with vegetable soup servings during lunch and dinner. Banana and milk may be taken in the form of shakes, during breakfast and midday snacks.

Day 5 Brown rice and tomatoes. Instead of beef, brown rice is used on Day 5. One cup of rice is good to last for the day together with tomatoes in order to induce cleansing.

Day 6 Brown rice and vegetables. On this day mixed vegetables may be consumed all day, together with one cup of rice.

Day 7 Up to two cups of brown rice may be consumed, together with fruit and vegetable servings.

Lucky's Restaurant on Cherry Street


Luck has nothing to do with the impeccably crafted menu at Lucky’s on Cherry. Tucked into a small section of a ‘mini strip’ if you will, they hide behind a simple exterior and surprise you immensely upon entering. Sunshine radiates during the lunch hour and warm candlelight bathes the dinner crowd. Rich hues and tasteful touches add a creative and decadent ambience. Try the food and you melt into the complex symphony of fresh, crisp, delicacy. And I must add of course that their gluten conscious menu is no exception.


We took our g-free neighbors to STOMP the other night (quite entertaining) and let them choose the place for dinner. After listing six or so to her she decided on Lucky’s, a spot she had yet to try in town. Upon mentioning they had a gluten free menu it made this cherry street gem sparkle even more.

We sat down and immediately informed our waitress that the three of us would be dining gluten free that evening. Menus were dispersed, drinks ordered, and our tummies began to grumble just in time for the rich complimentary hummus to arrive. Usually served with pita, the dish was accompanied instead with a plate stacked highly with crisp crudités. There is something so charming about vegetables that look like they were just plucked from the garden and served straight to you. Note the cute little carrot tails.

 I chose the Trimabach Riesling Chicken ($22.00). I am one of the "exceptions" to the food world that doesn’t cower when wanting to order the chicken. My husband insists that “chicken is chicken” and is mostly dry when ordered at a restaurant. Maybe I have more faith in our local chefs, and after trying this dish I more than delighted to say that it didn’t disappoint. It was served in an earthy lemongrass broth on top of jasmine rice, green beans, and enoki mushrooms. The chicken was bursting with moist and tender flavor, the accompaniments pairing perfectly in texture and flavor. Take that chicken doubters.
My neighbor Myrsini opted for the same dish while her husband delighted in his choice of the salmon.

Everyone’s (well the g-free diners that is) overall consensus? A must try for an upscale night out, stylish lunch hour, or spectacular brunch. They also offer a wonderful vegetarian menu! This place caters to all palettes.

40 days & 40 nights

Remember in highschool/college you gave up something for lent that inevitably aided in your mission to lose weight? You had this amazing perception of 40 days of diet bliss where you would emerge on Easter and look glowing and thin? I had my spiritual goals I made for Church and then my “giving up” something goals I wrote down at the Catholic school I attended. No fried food, no refined sugar, etc.


Maybe I should have focused on a less “shallow goal” if you will but hey, I looked at serving two purposes and all leading to a healthier enlightened life right? Right?

Anyhoo, this year I was deciding on what I was going to give up for lent. After much deliberation, I decided that I was going to give up “raising my voice”. I don’t do it often, but when I do it is unbecoming. I never wanted to be the person that yelled when I was frustrated or didn’t get my way. Maybe with another year under my belt I am growing wiser. Maybe.

But I gave up fried food too. What can I say, old habits die hard.

That said I bring you a delicious recipe. You knew that was coming right? If I am going to be perceived as shallow a pursuer of 40 day health, I might as well give you a finger lickin’ UNfried recipe out of it to redeem myself. One of the hardest things for me to turn down is French fries so I knew that had to be one of my “Lenten revamp recipes.” Oh I do adore a good French fry…and 40 days without one? Get OUT of here!

Garlic & Rosemary Baked French Fries
Baked to crispy crunch with seasoning that melts over your tongue, these un-fried fries definitely compete with it’s deep fryer counter part.

Ingredients
  • 2 large russet potatoes, scrubbed
  • 2 garlic cloves, minced
  • 3 tbs dry rosemary
  • 1 tbs Kosher salt
  • Extra Virgin Olive Oil
Directions
Preheat your oven to 450˚F. Cut your potatoes length wise about a quarter inch thick. Place in a large mixing bowl, lightly drizzle olive over them then toss to coat.

Add garlic, rosemary, and salt. Toss again to coat.
Line a baking sheet with parchment paper and bake for 20 minutes. Flip at this point and bake for another 20 minutes.
Let cool for about 5 minutes then enjoy!
Warning, do NOT get so excited and try to eat them right off the pan as burned finger tips will ensue.

Blue Dome Diner

Sunday morning hunger pains with no drive to crack some eggs and toss in veggies led me to comfort in one of Tulsa’s best breakfast diners, Blue Dome Diner. A once a month must stop, this diner dishes jazzed up home cooked style meals that are big on flavor and light on your wallet.


From the outside and upon entering you would think this diner is dime size. The front room is small and quaint, housing a few booths and tables and bar top seats. Walk through and you’ll discover a gargantuan back room resembling a large open concert hall. The bar is based here and serves up lip smacking bloody marys (request Titos) that you have to try. Just try not to suck it through the straw in mere minutes, a difficult feat I assure you.

We chose to sit in the cozy front room and belly up to the bar to watch the organized chaos of the open kitchen. The cooks cling to their spatulas and spoons while the waitresses bus back and forth with plates piled high. Sunlight poured into the little room through large glass windows and chairs squeaked on the old tile floor. The only issue is the mouthwatering melt in your mouth biscuits that pop out of the oven…unfortunately they aren’t kind to the gluten intolerant.

My go to is their Vegetable Scrambler ($7.49), a kitchen sink of vegetables and scrambled eggs with home fries on the side. Crunchy snap peas, fluffy broccoli, tender asparagus, zucchini and sweet baby carrots provide a scrumptious garden medley and nestle pleasantly with the eggs. They top the whole bit off with a pile of melted cheese. You also have your choice of French toast (house made sourdough bread), pancakes, house made biscuits and gravy or toast. Since none of the above are gluten free I opt for extra home fries and fruit. Their home fries, thickly sliced and quartered new potatoes are lightly blackened on the flat top grill. They usually need a little salt lovin’, but I like them anyway. A little Louisiana does the whole dish right in my book.

Blue Dome Diner is an excellent spot for the gluten free and also caters to the vegetarian crowd. I recommend for breakfast/brunch/lunch. They are open seven days a week.

Skating Rinks, Scrunchies, & Several Surprises

Some of my most favorite birthday memories were those spent at the local skating rink with my childhood friend Rachel who shares the same February 16th birthday. Both classes were invited, balloons donned the picnic tables plastered with plastic tablecloths, and cookie cakes piled high with sugary icing paraded themselves as centerpieces. Of the “rollerblade” generation, Rachel and I would look forward to another year at the rink where all eyes were on us in the disco lit oval stage. No matter how hard I tried, she always beat me in the round robin races but I am sure if there was a contest of who wore the most bracelets, the most washed denim, or had the blondest perm I would have won. Take note to new awards present day skating rinks. I just might show up and upstage on my birthday.


Birthday parties, office or family, can throw gluten intolerant gals and pals into a tizzy now a days. Cakes, cupcakes, cookies…I always feel bad making people go out of their way to make special arrangements. “Yes, please get me a cake. Just get make sure it’s gluten free. Oh, and you can only find them here and here. Don’t be surprised if it looks and feels like a brick too.” Not exactly the conversation you want to have around you birthday. And asking non-gluten free folks to bake at home for you? Forget about it! Asking my manager to foray into the unknown and risk explosive oven disasters doesn’t encourage job stability.

However, I was delightfully surprised multiple times yesterday. The first time was from my pops in our office lobby holding a beautiful bouquet of a dozen pink roses. (insert AWWWWWs here). They really brightened up and my day and desk! Thank you!

The second surprise came after lunch when my fellow coworkers serenaded me in an embarrassing rendition of 'Happy Birthday' and presented me with a Deerfields Bakery large, triple chocolate, gluten free brownie. Everyone was eager to dig in and it was, if I may say so myself, fabulous!! A little crumbly on the outside which I venture was due to packaging but magnificently moist on the inside. Rich squares of chocolate melted into smooth, sinful chocolate cake. This was a new brand for me and I highly recommend it! My husband surprised me with a birthday gift and took me out to dinner where my last surprise awaited. After a delicious local dinner at Juniper, one of the chefs, Justin Benner, surprised me with a delicious ending to the night…a silky mousse topped with ripe blueberries and raspberries. Now at this point I must admit a few things. One, I was stuffed more than my husband’s tenderloin special. Two, I am not the biggest dessert buff. I love making it but I am more a salt craver. However, neither of these points stopped me from attacking the seducing martini glass holding heaven in dessert form. I barely took a breath. I am sure I looked quite charming to the onlooker but I didn’t care.

All in all, one of the best birthdays I have ever had. It didn’t involve perms, scrunchied pony tails/t-shirts, or a skating rink, but it held some thoughtful and delicious surprises. Maybe I will call up Rachel for a white wash denim dual at the rink next year.

Stupid Cupid


Cupid's arrows struck me hard yesterday pointing me in the decadent direction of desserts. Isn’t that what one craves when your other half is whispering sweet somethings in your ear? Or in my case when I am greeted at the door by my seven year old about to burst to give me my valentines box of chocolates. Said chocolates came in a heart shaped pink box covered in fake pink roses and doilies. My boys (husband of course too) know how to make my heart melt.


So I in return baked up something to make them melt. My object of affection was also pink, also included hearts, and came in a different kind of doily. Bursting flavors cupped and baked into cute cakes. Kissed with x’s and o’s in sweet pink frosting. I don’t think they have ever been more excited about excessive pink details.

When looking up recipes for gluten free strawberry cupcakes, one in particular popped up periodically. Many bloggers made Elana’s, http://www.elanaspantry.com/, recipe and received raving reviews on its flavors, easy instruction, and simple ingredients. In a time of cupcake wars and competitive frou frou accented mini cakes, simple sounded right up our alley. Plus I wanted to spend most of my time snuggling by the fire watching cheesy valentines shows. Okay I am kind of kidding, quit rolling your eyes…unless they are rolling back into your head in ecstasy because you are reading this and enjoying the cupcakes already. Ecstasy eye rolling is permitted on Valentines day.

Since I was rushing around like a woman in love yesterday (a polite way of saying I was rushing around like a maniac blinded by pepper spray) I had to make slight alterations and used store bought gluten free strawberry icing. If you plop it into a zip lock and cut off the tip it makes it easy to pipe cute little somethings on the muffin tops!

Elana’s Strawberry Cupcakes

Ingredients
• ½ cup coconut flour

• 1 tablespoon arrowroot powder
• ¼ teaspoon celtic sea salt
• ½ teaspoon baking soda
• 4 large eggs
• ½ cup agave nectar
• 1 tablespoon vanilla extract
• ½ cup finely chopped fresh strawberries

Instructions
Preheat the oven to 350°F. Line 8 muffin cups with paper liners.

In a large bowl, combine the coconut flour, arrowroot powder, salt, and baking soda. In a medium bowl, whisk together the eggs, agave nectar, and vanilla extract. Blend the wet ingredients into the coconut flour mixture with a handheld mixer until thoroughly combined, then fold in the strawberries.
Scoop ¼ cup of batter into each prepared muffin cup.Bake for 20 to 25 minutes. Let the cupcakes cool in the pan for 1 hour.

Cheating France

If the French knew what I did to one of their traditional recipes I would most likely be hanged. But I live in America where making everything beyond easy is the norm. Just don’t tell the French.


Friday night was deemed movie night and “Midnight in Paris” was on the menu. As I let French music trill into my kitchen I pondered what to make for dinner. My pots and pans were screaming for a French meal. However my crockpot won. French gourmet in the crockpot. Coq Au Vin in the crockpot. Oh yes, you read that right.

I thought I was outsmarting the system. I thought it would be a cinch. I thought I wouldn’t be sweating over ingredients, furiously dicing over the flames. I thought wrong. The French haven’t knotted my noose but they sure did leave some bacon grease burns on my poor hands. I have also verified that my smoke detectors work very well. Very. Well. Do you have an amusing mental picture yet?

Bacon burns aside, I would say this first foray in crockpot gourmet was successful. I promise you would have never guessed that it was cooked in a slow cooker. Plus you only have to slave for say 30 minutes instead of 3 hours. Just make sure your smoke detectors have fresh batteries for lovely background music. My Parisian music apparently wasn’t cutting it.

Crockpot Coq Au Vin

Ingredients

• free range cut up chicken
• 10 pearl onions, peeled
• Half pound cremini mushrooms
• 2 cups cabernet sauvignon
• 2 cloves fresh garlic, crushed
• 3 sprigs fresh thyme
• Salt, pepper
• Bacon
• Bay leaf
• 1 cup chicken broth

Directions

In your skillet cook bacon over medium heat until browned. Place on a plate of paper towels and blot dry.

While the bacon cooks (and hopefully doesn’t spit at you) add your mushrooms, bay leaf and onions to the crockpot.

Toss chicken in salt and pepper and brown all sides in the bacon fat. I had to do this in a couple batches.

Add chicken into your crockpot. Pour wine and broth over the chicken, and add your bay leaf and garlic.

I cooked on high for 2 hours, low for 4.

Make sure to remove the bay leaf before serving!
